The bergamot citrus fruit is currently grown in many parts of the world but is native to Southern Italy, where it achieved prominence and also its name from the town of Bergamo where it has become a symbol that represents the whole town.For centuries, Bergamot Oil has been one of the most prized citrus oils and has been widely used in both perfumery and the culinary arts.The citrus fruit (Citrus bergamia) grows on bergamot orange trees. While the fruit itself is not edible, the dried peel is often used as a flavouring for confectionary including Turkish Delight, cakes, and if you love a cup of Earl Grey tea, you may not have realised it but you’re already enjoying the distinctive taste that bergamot offers, as it is used to flavour it.

Bergamot Oil possesses a complex aroma
based on a light citrus scent combined with sweet and fresh notes. Bergamot Oil is extracted mechanically from the rinds of the citrus fruit by machines called peelers. These mechanical peelers scrape the outside of the fruit under running water to get an emulsion channeled into centrifuges for separating the essence from the water. The rinds of 100 bergamot oranges yield about 3 ounces (85g) of Bergamot Oil.
