Amygluten - Vital wheat gluten - is the insoluble protein fraction of wheat, which has been extracted during the starch separation process. It is insoluble in water, pale yellow in colour and available in powder form. Vital wheat gluten displays visco-elastic properties, allowing it to expand and form a network while kneading, particularly useful in bakery applications.
