Amygluten - Vital wheat gluten - the insoluble protein fraction of wheat. It is a natural protein which has been extracted from the wheat during the starch separation process. It has been developed for the food industry and has a typical wheat taste. It is insoluble in water, pale yellow in colour and available in powder form. Vital wheat gluten displays visco-elastic properties, allowing it to expand and form a network while kneading.
