Benecel™ MC and HPMC are non-GMO, vegan, gluten-free and allergen-free, with a long history of safe use. Plant-based and sustainably sourced from wood, they are unique hydrocolloids that reversibly gel as temperature increases a property unmatched by any other hydrocolloid. Their distinctive polymeric structure improves cohesion, texture and mouthfeel across a wide range of food applications.

Depending on type, grade, use level and conditions, they perform many functions in foods including thermal gelation, film formation, thickening, binding and water retention. Several viscosity grades are available.

    Applications

    Plant-based and processed meat

    Methylcellulose is widely used in alternative meat and seafood as well as processed meat to improve texture and binding. During cooking it forms a thermally reversible gel that creates a firm, meat-like bite which remains as the product cools to eating temperature. Benecel™ MX and MX 100 grades are specially formulated for meat-alternative and vegetable-based applications, providing a firm bite, egg-free binding and moisture retention for an enjoyable eating experience.

    Bakery

    Benecel™ MC and HPMC stabilise dough and batter aeration to improve volume in cakes and gluten-free applications. In fillings, thermal gelation inhibits moisture migration into pie crusts and prevents boil-out while heating fruit bars and pocket-dough products.

    Dairy

    Benecel™ MC and HPMC improve and stabilise aeration in dairy desserts and sherbets, while creating a firm yet creamy structure in cream cheese.

    Desserts and Toppings

    Small amounts of Benecel™ MC and HPMC significantly enhance foam stability, particularly useful in stabilising whipped toppings and desserts.

    Meat Alternatives

    Benecel™ MX and MX 100 methylcellulose are formulated for meat-alternative and vegetable-based products. They provide a firm bite to simulate meat, replace eggs as a binder and help retain moisture.

    Prepared Foods

    For restructured and fried foods, Benecel™ MC and HPMC aid shape retention, bind ingredients and reduce oil pick-up. The polymer becomes part of the product matrix, so during frying product integrity is maintained and batter blow-out is reduced.

    Sauces and Savoury products

    Benecel™ MC and HPMC add texture and viscosity to sauces across a wide temperature range and reduce skin formation caused by water evaporation.

    Labelling and Regulatory

    Common label declarations include methylcellulose (E461), hydroxypropylmethylcellulose (E464) and modified cellulose. “Modified cellulose” is accepted as a common or usual name for methylcellulose or hydroxypropyl methylcellulose in food label ingredient statements in the US only.

    Benecel™ HPMC complies with current Food Chemicals Codex and JECFA monograph requirements, and with the purity criteria of E461 and E464 respectively under the Annex of EU Regulation 2012/231/EC and amendments.
