Sodium Gluconate is derived from fermentation of glucose and is a white to tan crystalline powder, that is very soluble in water, sparingly soluble in alcohol and insoluble in ether. Sodium Gluconate possesses outstanding chelating power, outperforming other chelating agents like EDTA and NTA for example. It is also oxidation and reduction resistant in aqueous solutions, even at high temperatures. Sodium Gluconate is a good plasticizer/water reducer for concrete, mortar and gypsum, while being an very good set retarder and can also inhibit bitterness.
